Hurdle technology was developed several years ago as a new concept for the production of safe, stable, nutritious, tasty, and economical foods. WebThe most important hurdles used are food preservatives (e.g. nitrite, sorbate, sulfite) and competitive microorganisms (e.g. lactic acid bacteria) (Leistner et al., 1981). In hurdle technology, hurdles are deliberately combined to improve the microbial stability and the referred to the auto-sterilization of stable, hurdle preserved foods.
